Mexican chicken burger

This burger with spiced chipotle chicken breast, in toasted brioche with guacamole, provides for a filling weekday treat for one and is ready in under 20 minutes.


Ingredients

  • 1 chicken breast
  • 1 tsp chipotle paste
  • 1 lime, juiced
  • 1-2 slices cheese
  • 1 brioche bun, split
  • ½ avocado
  • 2 cherry tomatoes, chopped
  • 3-4 pickled jalapeño slices, chopped
  • ½ small garlic clove, finely grated

  1. Between two pieces of cling film, place the chicken breast and roll it out to a thickness of about 1 cm. Spread over the chicken after combining the chipotle paste with half of the lime juice.
