For a simple midweek meal that is ready in about 20 minutes, wrap rosemary sprigs in lamb mince.
Ingredients
- 500g lamb mince
- ½ tsp allspice
- 2 garlic cloves, crushed
- 8 rosemary sprigs
- 4 pitta breads
- 170g pot Greek yogurt
- 2 lemons, cut into wedges
- 150g pack radishes, sliced
- ½ cucumber, chopped

- the grill is really hot. Mix the mince, spices, and garlic in a sizable basin. Each of the eight koftas is seasoned and formed by wrapping a rosemary sprig with the stalk coming out at one end around it. Continue until all of the mince is consumed. Place the koftas on a baking sheet and brush with a little oil. Grill for 10 minutes, flipping once, or until thoroughly cooked.
- Remove the rosemary stalks before serving or eat the koftas while still in the stalks. Pita, yogurt, lemon wedges, radishes, cucumber, and pickled chilies, if using, should be served alongside.
